The calisson, a cherished French almond delicacy, originates from the village of Aix‑en‑Provence. Ooh la la Artisan Confectionery has created its award‑winning version by honouring this historic confection and elevating it with exceptional, carefully sourced ingredients.
Each calisson begins with a homemade candied melon crafted from perfect, unblemished South African melons. This is combined with homemade candied orange peel and home‑ground almonds to form a fragrant, velvety paste. The mixture is set atop edible rice paper and finished with a smooth royal icing glaze, creating a refined balance of texture and flavour.
This signature confection was the founding creation on which Ooh la la Artisan Confectionery was built. It has since earned Great Taste Double Gold, reflecting its craftsmanship and enduring appeal.
